In Breath of the Wild it's Seafood Fried Rice, this is an Asian take with adding the pineapple and Asian flavors. I hope you like it! :)
Pineapple Shrimp Fried Rice
Serves 2.
Ingredients:
2 cups cooked rice
2 ounces shrimp, peeled and deveined
1/2 cup onion
2 ounces ham or Chinese sausage, diced (optional)
1/4 cup peas and carrots
1/4 - 1/2 cup pineapple chunks
1 green onion, chopped
Egg:
1 egg
pinch of salt
1/2 teaspoon Shaoxing wine
Sauce
1 tablespoon Shaoxing wine
2 teaspoons light soy sauce
1 teaspoon fish sauce
1/2 teaspoons sesame oil
dash of white pepper
Instructions
In a small bowl, beat eggs with pinch of salt and 1/2 teaspoon Shaoxing wine. Season shrimp with salt and pepper.
Heat a pan over medium heat then heat a tablespoon of oil. Add the eggs and scramble until just cooked. Transfer to a dish.
To the pan, add oil if needed. Add the shrimp and cook until done. Transfer to a dish.
Heat one tablespoon of oil in the pan. Cook the onion until translucent. Add the rice and 1 tablespoon Shaoxing wine, breaking up the rice if clumped together. Stir and add in the scrambled eggs, cooked shrimp, ham/sausage (if using), peas and carrots, fish sauce, light soy sauce, sesame oil, and a dash of white pepper. Stir to mix.
Add the pineapple and green onion. Stir to mix, season with salt and pepper to taste.
